Quiet Jim’s Memphis Style Sweet BBQ Sauce

Combine all of the following in a 5 qt. sauce pan:

1-1/2 C. cider (not white) vinegar
12 oz. can tomato paste
12 oz. frozen, concentrated, pineapple/orange/apple blend juice – NO water added
1 C. brown sugar
1 C. white sugar
1 C. pure (real) maple syrup
1/2 C. honey
3/4 C. molasses
2 Tbsp. worcestershire sauce (Lea Perrins brand for gluten intolerant folks)
2 Tbsp. liquid smoke
2 Tbsp. prepared mustard (e.g. Dijon)
2 Tbsp. salt
1½ Tbsp. ground allspice
2 tsp. onion powder
3/4 tsp. ground cayenne
3/4 tsp. ground black pepper
3/4 tsp. ground white pepper
3/4 tsp. ground cumin

Bring to boil over medium high heat. Simmer for 5 minutes, then add thickener.

To thicken: Mix 1 Tbsp. corn starch in 3 Tbsp. cold water, mix well. Slowly pour into boiling mixture while stirring constantly and vigorously. If not thickened to desired consistency, repeat.

Alternate thickeners: Arrowroot starch may be used like corn starch. If using arrowroot, use 2 Tbsp. starch with 3 Tbsp. cold water.

Recipe makes about 2 quarts of sauce.
