Dry rub for brisket or pork butts

1/2 C. sea salt
1/2 C. packed dark brown sugar
2 Tbsp. dried thyme leaves
2 Tbsp. cracked rosemary
2 Tbsp. onion powder
2 Tbsp. coarse ground black pepper
2 Tbsp. ground white pepper
2 Tbsp. lemon pepper
2 Tbsp. ground cayenne pepper
2 Tbsp. chili powder
2 Tbsp. arrowroot starch

Mix all ingredients well. Makes enough to rub 4 pork butts or 2-4 briskets (depending on size).
